It's funny that Leo used the katanas (samurai weapon) instead of the, Ninjato, which is what a ninja would use. Ninjas also didn't use staffs. That's more of a shaolin weapon. The sai is originally from China and when it got to Japan, it became the jutte which only had one prong on the side and was more like a dagger than opposed to a blunt weapon for defense. The nunchucks are also straight up Chinese. Just look at what Bruce Lee like to use in his movies.

I assume Leo used Katanas to match his Samurai like personality. Other than that I think they just picked weapons people would be familiar with, to hell with accuracy.
