It doesn't seem to fair if one person has 300 trophies to defend and the other has 30.
I think the games should be selected some other more fair way. Such as:
1. Use the random game challenge in Chat. I can alter it if need be. Both players meet in Chat and select 5 random games together.
2. Use one of these threads or create a new one
Game Series - Retro Uprising Both players agree on something such as

Movie Tie-ins or
Weird Games or you make a list of puzzle games and use that.
3. Make it a 3 man challenge - example:
I post "I am ready for a challenge."
That will make my current high scores the challenge games

I would copy and past all of my high scores here.
The challenge starts as soon as I post my trophies and lasts 72 hours.
Two people must accept my challenge - Acceptance could maybe be done via PM so people don't try to cherry pick their opponents.
If the challenger (me in this example) keeps 90% of his trophies after the 72 hours are up then he wins.
If the challenger fails to keep at least 90% of his trophies then which ever player stole the most scores wins.
4. have a third party select the games.
Example:
Person A posts links to X games. Person A can choose between 1 and 21 games - must be an odd number. Can be any score enabled games.
Person B and Person C accept the challenge.
Person B and Person C have 72 hours from the time the links are posted to set high scores.
Whoever gets the most trophies in those games during the 72 hours wins.
The winner gets 10 points.
To encourage participation:
The person that post the links gets 2 points. If he fails to get two challengers within 72 hours then he gets 0 points.
The loser gets 1 point.
The ideas can probably be improved on but I think it is more fair for both sides to be working from the same list of games.
