View Full Version : Hot Sauce Challenge
The heat of a pepper or hot sauce is measured in Scoville scale - Wikipedia, the free encyclopedia Units.
It is determined by how many drops of sugar water are required to mask the heat of the pepper. A jalapeno takes between 3K and 8K equal parts of water to pepper to mask the heat so a jalapeno is rated between 3K and 8K. Tabasco Sauce is about 2,500 to 5,000.
Capsaicin is the chemical in peppers that makes them hot. Pure capsaicin is 16 Million Scoville Units and is as spicy as anything can get.

We did a hot sauce challenge once at the kitchen I work at it was to funny watching their faces as they ate each pepper they must have gone through 5 gallons of milk that day :lol:

It's smoky and tangy with just the right amount of sugar. It's not very spicy compared to the regular Tabasco, but the flavor is simply amazing. I put it on some pizza last night and my chorizo and eggs sandwich this morning. If you ever find this thing, grab a few bottles.
And it made me think this thread was worth a shot. And I thought it might make an interesting video.

When I was about 8 my buddy's brother said he would give me 95 cents if I ate a whole habanero pepper. I woke up in the middle of the night with ungodly stomach pains, it was all I could do to roll around on the floor driving my fist into my stomach.

I have some ground dried naga jolokia. Either it is over rated or my batch is a dud. I also have some ground dried habanero and it is just as hot as the naga.

ON TOPIC:
I say this whole heat scale is a subjective thing.
What seems hot to me may seem mild to the next person or vice - versa, so how can we determine the heat of a pepper except through personal experience?

The other issue is that not all peppers grow with the same heat.
I've had peppers coming from the same plant where some seem hotter than others.
So how could I describe the heat of those peppers to someone else?
Also, different countries seem to have different views of what is hot; here in Canada 'Pepper Jack' cheese is mild and the peppers they put in it have no heat at all, in my opinion.
Pepper Jack cheese from the U.S. I've tried had considerable heat by comparison.
I eat habanero and cheese tamales for breakfast. My wife told me about a time she went to Europe and ate a spicy dish in France. All it had was black pepper. I know Indian and Thai food is really spicy, so they're used to the heat.

I love hot spicy foods, I have Hot pepper sauce (made from scotch bonnet peppers) on sandwiches. Ive ate that many hot chillys my taste buds dont register anything milder than a vindaloo curry.
I have had that cool million pepper extract on a ham sandwich - the hotest I ever had, boy did that burn like hell! never again!!
I would use it in a dish maybe but never a sandwich again.

Kong, if I had $50 lying around I'd definitely send you the capciacin crystal. Watching you mix that with a tequila shot would be epic.
As for spicy being subjective, that's true to an extent, however when you start getting into the HOT HOT realm like Kong is describing, their is not much subjectivity. Scoville units is pure science.
I used to have a fetish for Dave's Insanity Sauce. I think I've told this story before, but I single handedly ruined a high school cafeteria lunch break by dumping an entire bottle into the community BBQ sauce. There's more to the story, but you get the idea.
As I've also mentioned before, I'm all about the Sricacha (sp?), nowadays. Perfect amount of heat with great flavor. Mmmmm good!

I've had the stuff that was on the desk behind him. My buddy put about 500 wings worth on 1 wing and for about 20 minutes he was on his knees hanging off the counter in the kitchen and all his pathetic little voice could say was "heeeelp".

The stuff behind him is Dave's Insanity Sauce. See my earlier post, but I was hooked on the stuff back in the day. It's lethal, but compared to this other stuff Kong has been talking about, it's nothing.

Oh yeah, I think the stuff I had was a powered up version because it came in a small bottle but I dont know for sure, I've never seen a big bottle like that. It clocks in at 180,000 scovill units.
I read a lot about hot sauces. It is the closest thing I have to a physical addiction.
I haven't tried Marie Sharp's but I have read several reviews that say it is the best all around when considering heat, flavor and price.

Ive tryed Insanity, Its quite hot, not too keen on the taste though.
Can eating too much spicy foods make you ill?
Or even eating some indivisual thing thats massivly hot damage you?

Well, again I feel I must state that I believe the whole issue is based on an individual's point of view .. or sensitivity to heat, more accurately.
For example, I would personally not go any hotter than a pepper from a plant and some of those I've had are painfully hot to eat ; all natural, lots of pain to be had.
So while I understand the quest for something hotter, I just don't share it.
For those of you who want lots of flavor and enough heat to send you to the hospital {like it did to me, after eating nearly half a large container} I recommend this stuff, which is commonly available and isn't a major investment {around $7 for a large bottle, small size shown in picture}:

but after trying both I find the chili/ garlic paste to be much tastier and also hotter.
And before anyone says that I'm ignoring the science behind the Scoville units heat scale, let me tell you that I am not.
All I'm saying is that even the science behind the measurement is subject to an individual's tolerance of heat.
So that kind of turns the Scoville scale into little more than a guideline, in my opinion.

When I think of hot sauce I think of cartoons like Animaniacs when they eat it they spit fire out of their mouths. I used to eat hot sauce, but my stomach is very sensitive to spicy things now. :(

The modern more scientific and more accurate measurement is High-performance liquid chromatography - Wikipedia, the free encyclopedia (http://en.wikipedia.org/wiki/High-performance_liquid_chromatography) but it hasn't been used as much so it is harder to get the ratings for specific items.
The Scoville number is determined by how much water is required to completely mask the hotness. It is measured by a panel of human judges so it is not 100% accurate. Also different peppers even on the same plant can be slightly different so it is just a general range, not a perfectly exact science.

I have ate a lot of hot stuff. I have never once felt it on the way out. One time I ate a whole pickled habanero and it felt like someone hit me in the stomach with a bat and I almost threw up. I don't know why, maybe an empty stomach. But I normally don't feel it any lower than my throat.

No, I agree with the science behind the test.
What I'm saying is that people are different and will therefore react differently to things.
For example, my own metabolism is such that I cannot eat an apple without having a glass of water immediately afterwords, because it sets my mouth on fire with its acid.
While this may seem strange to most people {and they do say it's odd}, this is what I have experienced consistently throughout my life.
So while the majority of people can eat apples with no consequence, I cannot.
Applying this same mode of thinking to the hot peppers issue, I think it's within the realm of possibilities that some people would be able to tolerate much more heat than others.
It is by that reasoning that I say the Scoville unit scale is subject to individual interpretation based on personal experience.
