With Thanksgiving upon us, it is almost time for my favorite holiday of the year, the day after Thanksgiving. On this day, we (Americans) are treated to great rivalry games in college football and Thanksgiving day leftovers.

This year, I have a plan that involves using leftover of turkey, stuffing, and mashed potatos. My plan is mold a mixture of the three into balls, bread them with corn meal, and then deep fry them and cover with gravy. I plan on calling it the Thanksgiving Hushpuppy.

What are all of your plans for Thanksgiving leftovers?

I literally shed a tear.

I always just go for individual things, I've never really put a thought into leftovers.

My wife makes Thanksgiving Leftover Egg Rolls, same principal as your hush puppy except with the egg roll wrappers. Turkey sandwiches are always a staple when Thanksgiving leftovers are concerned.

I'm going to make some turkey tamales and grill them in the pit. The Mrs. is going to make some http://en.wikipedia.org/wiki/Pozole (traditional Mexican soup) with an extra bird she got from work. I don't care much for American football, but I do have the Mexican Football semifinals tomorrow and Sunday :D

Same here Cam3ron. Mine was a month ago.

Although it is not as big a holiday here in Canada as it is for our cousins to the south.

For me it was Turkey Sandwiches and Turkey Soup. I will have to wait until Christmas for more.

well, it was a little bigger for us before but believe I've mentioned it. We went to Shuswap Lake (if you know where that is) and met up with grandparents and my one uncle who had just gotten engaged at the time. Big family thing, still kind of casual, I brought the snes and beat SMB 3 all the way through in 2 days in my free time lol.

Embarrasingly, it was my first time beating the game 100 % through, lol. At least that I can remember and on my own. I probably should.

Is my computer still having issues? Strangely, and it's odd that you mentioned that, I just tested to see if it was working now and it did no more than a minute ago. I can play games again, I believe it was the Windows XP Service pack 3 that messed with things but my computer had 2 update sessions since then that fixed things wrong with the new service pack I believe.

@Cam3ron: It is a nice lake. That is one thing I love about BC. Lots of beautiful areas like that.

@Tails: I have thought lately about seeing how many people that are on RU are local to me and having a meet and greet maybe at a local arcade. I have been so busy lately I haven't had much time to look into it further though.

That probably is a good policy not to meet people from the internet. My daughter definitely follows that policy.

My family has always done the sandwich and soup routes, but Hushpuppies and Eggrolls sounds great. These might become new traditions.

I wonder if I can convince someone to make the special Hushpuppies or Egg Rolls at Christmastime as our Thanksgiving already happened. They sound delicious. :D

A whole lot of cold turkey sandwiches.
We had a twenty pound turkey, usually we have a good amount of turkey remaining when there are the sixteen people we have most years, this year there were ten people, not much of the turkey was eaten, so we have a ton of turkey left over.

Assuming you've got the right bread for it, that stuff tastes fantastic microwaved. I don't know I can even get myself to eat cold turkey but sure enough I do.

I normally fry the leftover turkey in butter and make sandwiches. Yummy!

Thanksgiving Hushpuppies...I'll give them a 6/10. Taste was great, the problem was with the Corn Meal breading and the frying process. After I fried a couple, the meal wouldn't stick to the mashed potato ball anymore, thus causing the hushpuppy to fall apart.

I probably need to figure out better frying temperatures and better breading...

ever think to construct that like a meatball?

like I know how cornmeal and eggs force it together, what about that? Like add meat, maybe it can merge.

They were made like meatballs. If I try it again, I will try to make a batter instead, kinda of like a corndog. The idea that Sabby mentioned about the Thanksgiving eggroll got my girlfriend's attention.

@ Jim: try dipping your balls in some raw scrambled eggs first then bread them. I like to use 1 yolk per three eggs. This should help with keeping the bread from falling off the ball. As for the temperature. Since you don't want the bread to burn before the inside is nice and warm, you should keep the temperature as constant as possible. I don't ever measure the temperature. What I do is sprinkle a drop of water in the oil. If it cracks and pops as soon as the water touches you're good to go and should reduce the heat just a tad. After a couple of batches, if you notice that the cooking time is changing you should adjust your temperature as you see fit.

This thread is probably going to die soon, but I'll throw in my Leftover recipe. It is very similar to 5cents and Sabby's idea, although theirs sounds slightly better.

I call mine "The Hurricane":

Ingredients - Mashed Potatoes, Stuffing, Turkey, Cranberry Sauce

Add ingredients into large bowl, equal parts of potato, stuffing and turkey. Microwave for one minute. Stir furiously. (Hurricane) Microwave for another minute. Stir again. (Hurricane)
Add a few dollops of cranberry sauce and eat. :)

Oh yeah, don't forget the gravy. ;)

Usually I whip one up late night on Thanksgiving after a ton of drinks and other festivities. Like the folks at Campbells' say: Mmmmm good. :}
